This is an extremely simple, tasty, light and absolutely summery starter recipe for adults and children. It is possible to make it with the classic ricotta, but for an even creamier result we suggest using the Crema di Rugiada Artigiana, winner of the Italian Cheese Award in 2017 and 2019. Cook the smooth penne pasta in salted water, and put 2-3 tablespoons of Crema di Rugiada (for each diner) in a bowl. Add a little cooking water from the pasta to the Crema di Rugiada, diluting it and making it even more creamy. When the pasta is cooked, drain it and pour it into the bowl with the Crema di Rugiada, stirring. Garnish with fresh basil leaves, and a drizzle of EVO oil if you like.
