On the inside of our farm “IL CARRO” rises the flavor cave: a cave with natural environment, digged into carstic rock of our territory, where we let our cheeses refining.
After a short period of storage in dry-cell we select the best peaces destinated to be refined in the cave for a variable period that goes from 4 to 24 months in constant controlled temperature and humidity
